Cheesy Tater Tot Beef Casserole

Introduction

This Cheesy Tater Tot Beef Casserole is the ultimate hearty comfort-food dinner. Seasoned ground beef and colorful vegetables are combined with creamy mushroom soup, topped with crispy golden tater tots and plenty of melted cheddar cheese. Ingredients

1½ lb ground beef

1 small onion, diced

1 can (10.5 oz) cream of mushroom soup

1 cup frozen mixed vegetables

1 cup frozen corn

1½ cups shredded cheddar cheese

1 bag (32 oz) frozen tater tots

1 tsp garlic powder

1 tsp paprika

½ tsp black pepper

½ tsp salt

1 tbsp olive oil

Instructions

Prepare the Beef

Preheat the oven to 375°F (190°C).

Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for 2–3 minutes until softened.

Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess grease.

Season with garlic powder, paprika, salt, and black pepper.

Make the Filling

Stir in the cream of mushroom soup, frozen mixed vegetables, and corn. Cook for about 3–5 minutes, stirring until everything is well combined and heated through.

Assemble the Casserole

Transfer the beef mixture to a greased 9×13-inch baking dish and spread it evenly.

Sprinkle about half of the shredded cheddar cheese over the beef mixture.

Arrange the frozen tater tots evenly across the entire surface.

Bake

Bake uncovered for 35–40 minutes, or until the tater tots are golden and crispy.

Sprinkle the remaining cheddar cheese over the top and return to the oven for another 5–10 minutes, until the cheese is completely melted and bubbly.

Serve

Let the casserole rest for about 5 minutes before serving. Scoop generous portions and serve hot.

For extra flavor, add Worcestershire sauce to the beef mixture.
