🛒 Ingredients
🥩 Beef & Vegetables
2 lbs ground beef
1 medium yellow onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
2 cloves garlic, minced
1 tbsp olive oil, if needed
🧀 Cheese & Sauce
8 oz cream cheese, softened
1 cup heavy cream
2 cups shredded cheddar cheese
8 oz Velveeta or processed cheddar cheese, cut into small cubes
½ cup sour cream
🌶️ Seasonings
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
½ tsp Italian seasoning
½ tsp chili powder, optional
¼ tsp red pepper flakes, optional
👩🍳 Instructions
- Prepare the vegetables
Dice the onion and both bell peppers into small, even pieces. Mince the garlic.
This helps the vegetables cook evenly and ensures every bite gets a little beef, pepper, onion, and cheese. - Brown the ground beef
Heat a large skillet over medium-high heat.
Add the ground beef and cook for 7–9 minutes, breaking it apart with a spatula until completely browned.
Drain excess grease if necessary. - Add the vegetables
Add the diced onion, green bell pepper and red bell pepper.
Cook for approximately 5–7 minutes, stirring occasionally, until the vegetables begin to soften.
Add the garlic and cook for another 30–60 seconds. - Season everything
Add the salt, black pepper, garlic powder, onion powder, paprika, Italian seasoning and optional chili powder/red pepper flakes.
Stir thoroughly so the seasonings coat the beef and vegetables. - Make the creamy cheese mixture
Reduce the heat to low.
Add the softened cream cheese and heavy cream. Stir until the cream cheese melts into the beef mixture and creates a creamy sauce.
Add the cubed Velveeta and stir until melted and smooth.
Finally, stir in the sour cream.
Do not let the mixture boil after adding the sour cream. - Add cheddar
Stir in 1 cup of shredded cheddar cheese until melted.
Reserve the remaining cup for the top.
Taste the mixture and adjust the seasoning if needed. - Transfer to the baking dish
Preheat your oven to 375°F (190°C).
Lightly grease a 9×13-inch baking dish.
Transfer the beef and cheese mixture into the dish and spread it evenly. - Add the cheese topping
Sprinkle the remaining 1 cup shredded cheddar cheese evenly over the top.
For an extra-cheesy casserole, add another handful of cheddar or mozzarella. - Bake
Cover the casserole loosely with aluminum foil.
Bake for 20 minutes.
Remove the foil and continue baking for another 10–15 minutes, until the cheese is completely melted, bubbling and lightly golden.
For a more browned top, broil for 1–2 minutes, watching carefully. - Rest and serve
Remove from the oven and let the casserole rest for 5–10 minutes.
Garnish with chopped parsley or green onions if desired.
Serve hot while the cheese is still gooey and melted. 🤤🧀
🔥 Pro Tips
Brown the beef well before adding the vegetables for deeper flavor.
Drain excess grease so the casserole doesn’t become oily.
Soften the cream cheese before adding it for a smoother sauce.
Don’t boil after adding sour cream—it can cause the sauce to separate.
For extra flavor, use a combination of sharp cheddar and Monterey Jack.
Add diced jalapeños if you like a spicy kick.
For a complete meal, serve it over rice, pasta, mashed potatoes, or with crusty garlic bread.
