Crispy Smash Burger Tacos

These viral tacos combine the crunch of a pan-fried tortilla with the juicy, savory goodness of a smash burger, all tied together with melted cheese and tangy burger sauce.

Ingredients

For the Tacos:

  • 1 lb (450g) ground beef (80/20 chuck works best for moisture and flavor)
  • 4 small (6-inch) flour tortillas
  • 4 slices American cheese or sharp cheddar cheese
  • Kosher salt and freshly cracked black pepper
  • Optional toppings: Shredded iceberg lettuce, diced white onions, and sliced dill pickles

For the Special Burger Sauce:

  • 1/2 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 2 tbsp finely diced dill pickles or pickle relish
  • 1 tsp white vinegar
  • 1/4 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Whisk the Sauce: In a small mixing bowl, combine the mayonnaise, ketchup, yellow mustard, diced pickles, white vinegar, garlic powder, salt, and pepper. Stir well until smooth and set aside.
  2. Portion the Beef: Divide the ground beef into 4 equal portions (about 4 oz each). Gently shape them into loose balls without overworking the meat, and season the outsides generously with salt and pepper.
  3. Heat the Griddle: Preheat a large cast-iron skillet, heavy-bottomed pan, or flat-top griddle over medium-high heat until hot.
  4. Smash and Sear: Place one beef ball onto the hot surface, then immediately place a flour tortilla directly on top of it. Using a heavy burger press, a metal spatula, or the bottom of a heavy skillet, press down firmly and evenly over the tortilla. Flatten the meat until it spreads thinly to the edges of the tortilla.
  5. Crisp the Beef and Tortilla: Let it cook undisturbed for 2 to 3 minutes. This allows the beef to form a deeply browned, crispy crust and crisps up the edges of the tortilla.
  6. Flip and Melt: Carefully slide a thin spatula underneath and flip the taco over so the tortilla-side is now down and the beef is facing up. Immediately place a slice of cheese onto the hot beef patty. Cook for another 1 to 2 minutes until the cheese is melted and bubbling.
  7. Assemble and Serve: Remove the taco from the pan, fold it in half, and open it slightly to add your choice of lettuce, onions, and a generous drizzle of the special burger sauce. Serve immediately while hot and crispy.
