Cheesy Sloppy Joe Biscuit Bake

This comforting, family-friendly casserole combines a savory, homemade sloppy joe meat filling with a topping of flaky biscuits and melted cheddar cheese.

Ingredients

  • 1.5 lbs (680g) ground beef
  • 1 medium yellow onion, finely diced
  • 1 green bell pepper, finely diced (optional)
  • 3 cloves garlic, minced
  • 3/4 cup ketchup
  • 2 tbsp tomato paste
  • 1 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • 1 cup beef broth or water
  • 1 tbsp brown sugar (optional, for a touch of sweetness)
  • Salt and freshly ground black pepper to taste
  • 1 can (16.3 oz) refrigerated jumbo buttermilk biscuits (such as Pillsbury Grands)
  • 1.5 cups shredded sharp cheddar cheese
  • 2 tbsp melted butter (for brushing the biscuits)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Cook the Meat and Veggies: In a large skillet or pan over medium-high heat, cook the ground beef, diced onion, and bell pepper until the beef is fully browned and the vegetables are tender. Drain any excess grease. Stir in the minced garlic and cook for 1 minute until fragrant.
  3. Make the Sloppy Joe Sauce: Add the ketchup, tomato paste, yellow mustard, Worcestershire sauce, beef broth, and brown sugar to the skillet. Season with salt and pepper. Reduce heat to medium-low and let simmer for 5 to 8 minutes until the sauce thickens up nicely.
  4. Transfer to Baking Dish: Pour the hot sloppy joe mixture into your prepared 9×13-inch baking dish and spread it out into an even layer.
  5. Add the Biscuits: Open the can of refrigerated biscuits and separate them. Cut each biscuit in half horizontally (or leave them whole if you prefer larger portions) and arrange them neatly over the top of the sloppy joe mixture. Brush the tops of the biscuits with the melted butter.
  6. Bake: Bake in the preheated oven for 12 to 15 minutes, or until the biscuits are puffed up and golden brown on top.
  7. Add Cheese and Finish: Remove the dish from the oven, sprinkle the shredded sharp cheddar cheese evenly over and around the biscuits, and return to the oven for another 3 to 5 minutes until the cheese is completely melted and bubbly.
  8. Serve: Let cool for 5 minutes before scooping out portions. Serve warm!
