Ultimate Loaded Mashed Potato Bowl

This ultimate comfort food bowl layers fluffy homemade mashed potatoes with savory seasoned ground beef, sweet corn, rich brown gravy, and a blanket of melted cheddar cheese.

Ingredients

  • For the Mashed Potatoes:
    • 2 lbs (approx. 4 large) russet or Yukon Gold potatoes, peeled and quartered
    • 1/4 cup unsalted butter
    • 1/3 cup warm milk or heavy cream
    • Salt and white or black pepper to taste
  • For the Beef & Gravy Layers:
    • 1 lb (450g) ground beef
    • 1 packet (approx. 1 oz) brown gravy mix (prepared according to package directions with water or broth)
    • 1 can (15 oz) sweet corn kernels, drained and heated
    • 1.5 cups shredded sharp cheddar cheese
    • 1 small onion, finely diced (optional)
    • 1 clove garlic, minced (optional)

Instructions

  1. Make the Mashed Potatoes: Place the quartered potatoes in a large pot and cover with salted water. Bring to a boil and cook for 15 to 18 minutes until fork-tender. Drain well. Mash the potatoes with butter, warm milk, salt, and pepper until completely smooth and fluffy. Keep warm.
  2. Cook the Beef: In a skillet over medium-high heat, cook the ground beef (along with diced onions and garlic if using) until completely browned. Drain any excess grease.
  3. Prepare the Gravy: Prepare the brown gravy mix according to the package instructions in a separate saucepan over medium heat until thickened and bubbly. Pour half of the hot gravy directly into the cooked ground beef, stirring to coat well. Keep the remaining gravy warm for serving.
  4. Warm the Corn: Heat the drained sweet corn in a small saucepan or microwave-safe bowl until hot. Season with a small pat of butter, salt, and pepper.
  5. Assemble the Bowls: Divide the hot, fluffy mashed potatoes evenly among four serving bowls, creating a slight well or depression in the center of each.
  6. Layer and Serve: Spoon a generous portion of the warm sweet corn over the potatoes, followed by a hearty scoop of the savory gravy-infused ground beef. Generously sprinkle the shredded sharp cheddar cheese over the top while everything is still piping hot so it melts. Drizzle the remaining warm brown gravy over the top right before serving.
