π©βπ³ Instructions
- Prepare the beef
Pat the beef chunks dry with paper towels. Season with salt, black pepper, garlic powder, onion powder, paprika, and Italian seasoning. - Optionalβbut highly recommended: sear the beef π₯
Heat a little oil in a large skillet over medium-high heat. Brown the beef in batches for about 2β3 minutes per side. You don’t need to cook it throughβthe slow cooker will do that. - Add everything to the Crockpot
Place the beef in the slow cooker. Add the diced onion, garlic, and sliced mushrooms. - Make the mushroom gravy
In a bowl, whisk together:
Golden mushroom soup
Beef broth
Worcestershire sauce
Pour the mixture over the beef.
- Slow cook
Cover and cook:
LOW: 7β8 hours
HIGH: 4β5 hours
The beef should be very tender and easy to break apart with a fork.
- Make the gravy extra creamy π₯£
About 15β20 minutes before serving, stir in Β½ cup sour cream or heavy cream if you want a richer, creamier sauce.
For a thicker gravy, mix 1 tbsp cornstarch with 2 tbsp cold water and stir it into the Crockpot. Cover and cook for another 10β15 minutes.
- Taste and adjust
Taste the gravy and add additional salt, pepper, or Worcestershire sauce if needed. - Serve π½οΈ
Spoon the tender mushroom beef and plenty of gravy over creamy mashed potatoes, egg noodles, or rice.
Garnish with fresh parsley and serve hot!
π‘ Pro Tips
Chuck roast gives you exceptionally tender beef because it becomes very soft during slow cooking.
Searing the beef first adds a deeper, richer flavor.
Don’t add too much liquidβthe beef and mushrooms release moisture as they cook.
Add sour cream at the end rather than at the beginning to help prevent curdling.
For a richer mushroom flavor, use fresh mushrooms along with the golden mushroom soup.
If the gravy is too thin, use the cornstarch slurry at the end.
