Crispy French bread loaves hollowed out and loaded with tender chicken, a rich and garlicky Alfredo sauce, and a double layer of melted mozzarella and Parmesan cheese.
Ingredients
The Bread & Chicken
- French Bread / Baguettes: 2 medium loaves (about 30cm each), cut in half horizontally
- Chicken Breast: 1 large (about 300g), boneless and skinless, cooked and diced or shredded (rotisserie chicken works great as a time-saver)
- Olive Oil or Melted Butter: 2 tablespoons
- Garlic: 2 cloves, minced (for brushing the bread)
The Garlic Alfredo Sauce
- Butter: 3 tablespoons (unsalted)
- Garlic: 3 cloves, minced
- All-Purpose Flour: 2 tablespoons (optional, to help thicken)
- Heavy Cream (Cooking Cream): 240ml (1 cup)
- Parmesan Cheese: 3/4 cup, freshly grated
- Salt & Black Pepper: To taste
- Italian Seasoning or Parsley: 1/2 teaspoon
The Cheese Topping
- Mozzarella Cheese: 1.5 cups, freshly shredded
- Parmesan Cheese: 1/4 cup, freshly grated
- Fresh Parsley: 1 tablespoon, chopped (for garnish)
Instructions
1. Prep the Bread Boats
- Preheat your oven to 200°C (400°F). Line a large baking sheet with parchment paper or aluminum foil.
- Cut the French bread loaves in half lengthwise.
- Using a knife and your fingers, gently press down and hollow out the center of each bread piece to create a “boat” or trough, leaving a sturdy border and bottom so they hold the filling. (Reserve the soft bread crumbs for another use, like breadcrumbs or meatballs).
- In a small bowl, mix 2 tablespoons of melted butter (or olive oil) with 2 minced garlic cloves. Brush this garlic butter generously over the inside of each bread boat.
- Place the bread boats on the baking sheet and bake plain for 5 minutes just to toast the edges slightly.
2. Make the Garlic Alfredo Sauce
- Melt 3 tablespoons of butter in a saucepan over medium heat.
- Add the minced garlic and cook for 30 to 45 seconds until fragrant, being careful not to burn it.
- Optional step for extra stability: Stir in the 2 tablespoons of flour and cook for 1 minute to create a light roux.
- Slowly pour in the heavy cream while whisking constantly to prevent lumps. Bring to a gentle simmer and let it thicken for 2 to 3 minutes.
- Reduce the heat to low, stir in 3/4 cup of grated Parmesan cheese, Italian seasoning, salt, and black pepper. Whisk until the cheese melts completely into a smooth sauce.
3. Combine Chicken and Sauce
- Add the diced or shredded cooked chicken directly into the warm Alfredo sauce.
- Toss well so every piece of chicken is coated in the rich, creamy sauce. Remove from heat.
4. Assemble and Bake
- Spoon the creamy Alfredo chicken mixture evenly into the pre-toasted French bread boats.
- Generously pile the freshly shredded mozzarella cheese and the remaining 1/4 cup of Parmesan cheese all over the top of each boat.
- Bake in the preheated oven at 200°C (400°F) for 10 to 12 minutes, or until the cheese is completely melted, bubbling, and golden brown on top. (Tip: Switch the oven to broil for the final 1 to 2 minutes to get an extra-crispy, golden cheese crust—just watch it closely so it doesn’t burn).
- Let cool for 2 minutes, garnish with freshly chopped parsley, slice into individual portions, and serve hot.
