- Cook the noodles
Cook the noodles according to package directions until just al dente. Drain and set aside. Toss with a tiny bit of oil to prevent sticking. - Make the sauce
In a small bowl, whisk together the soy sauce, honey, hoisin sauce, vinegar, sesame oil, minced garlic, and ginger. Set aside. - Cook the chicken
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the chicken pieces in a single layer and cook for 5–7 minutes, stirring occasionally, until golden and cooked through. - Add the sauce
Pour the sauce over the chicken. Stir well and let it simmer for 1–2 minutes.
Add the cornstarch slurry and cook for another 1–2 minutes until the sauce thickens and becomes glossy. - Combine with noodles
Add the cooked noodles to the skillet. Toss everything together until the noodles are fully coated in the sticky sauce (about 1–2 minutes). - Finish and serve
Sprinkle generously with sesame seeds and sliced green onions.
