Beef Liver & Caramelized Onions

Introduction

Tender beef liver paired with deeply caramelized onions makes a classic, hearty comfort-food dinner. The liver is quickly seared until golden and tender, then served with sweet, savory onions cooked in the same skillet for maximum flavor. Simple ingredients, rich flavor, and ready in about 30 minutes.

Ingredients

For the Liver

1½ lb beef liver, sliced

½ cup all-purpose flour

1 tsp salt

½ tsp black pepper

½ tsp garlic powder

½ tsp paprika

2 tbsp vegetable oil

1 tbsp butter

For the Onions

2 large yellow onions, thinly sliced

2 tbsp butter

½ tsp salt

½ tsp black pepper

½ cup beef broth

1 tsp Worcestershire sauce

½ tsp dried thyme

Instructions

Prepare the Liver
Pat the liver slices dry with paper towels. In a shallow bowl, combine flour, salt, black pepper, garlic powder, and paprika. Lightly coat each liver slice, shaking off any excess flour.

Caramelize the Onions
Heat 2 tablespoons of butter in a large skillet over medium heat. Add the sliced onions and salt. Cook for 10–15 minutes, stirring occasionally, until soft, golden brown, and caramelized. Transfer the onions to a plate.

Cook the Liver
Add the vegetable oil and 1 tablespoon butter to the same skillet. Once hot, add the coated liver slices in a single layer. Cook for about 2–3 minutes per side, depending on thickness, until nicely browned and cooked through.

Make the Gravy
Return the caramelized onions to the skillet. Pour in the beef broth and Worcestershire sauce, then sprinkle in the thyme. Stir gently, scraping up the flavorful browned bits from the bottom of the pan.

Simmer for 2–3 minutes until the sauce slightly thickens and coats the liver and onions.

Serve
Serve immediately with the caramelized onions and pan gravy spooned generously over the top.
